Sevarome and M.O.F. demonstration

Today we went of a tour of Sevarome, which is an international flavoring company based in Yssingeaux. We heard a lecture, went on a tour of the factoring, then participating in a “smelling” (like a tasting). It was interesting to learn about the science behind flavors and smells, the different products and processes of the company, and how they can be useful in our future.

Then we had a three hour demonstration conducted by one of the visiting M.O.F., which if you’ve seen the recent documentary, “Kings of Pastry,” they are the people who receive their tri-color collar. There are different ones here every week, but today we saw Bruno Montcoudiol produce an entrement. He gave so many interesting tips about assembling entrements and making chocolate mousse, so I feel like I learned a lot. We ate his demonstration and we also ate a buffet of his desserts for lunch.

We also has another M.O.F who set up an incredible veinoisserie and bread display for us to view, and very expensive technique books for sale.
