Day 9


Becky and Sarah have arrived! They miraculously found us driving all the way from Lyon into this tiny and confusing town. All we have is a tile floor and one chair with removable cushions in our apartment, so they cuddled up  on the floor and looked totally miserable. Their misery moved Steph and I to give them our “box springs” (not the same as American) and we are sleeping on the floor on our mattresses. I think we can all deal with it.

We went to the Thursday Market and filled our fridge with fresh produce in abundance. It is extremely well priced especially considering how expensive everything is in France. I also procured some of the local yogurt in various flavors that I am eating for breakfast right now. We are getting more comfortable, but the “final frontier” of market shopping is the butcher…which none of us trusts our French against. Maybe someday. After shopping, we stopped in at the local patisserie and had a delicious breakfast of café and an apple and cream pastry.


When we got to class today, chef had prepared his super secret waffles, and we all gorged ourselves. I do not know how to describe to you the amazing-ness of these waffles, but nevertheless, they are unlike anything you have ever had before. They have the pull and sweetness of brioche, sugar crystal pockets, but they are neither light nor crispy like a normal waffle, but so much better. He worked on them for 20 years, so alas our only way of getting the recipe is to pay him half a million dollars. Any takers?


Finally, we made our Gateaux St. Honore, which is a base of pate brise, and a ring of pate choux with profiteroles, and then the unnecessarily messy crème chiboust. This is not my favorite dessert because you cannot control the perfect even-ness of the profiteroles, but it’s very French.
