Orientation Day


We had a light breakfast of brioche-type rolls sprinkled with what appeared to be large turbinado sugar, accompanied by espresso, orange juice and grapes. The grapes have seeds. Can you eat the seeds? Is it polite to remove them from my mouth because I don’t like chewing them? I’m not sure. We then met both of our chefs, and had a slideshow of the program. At first impression, it seems nearly perfect. They structure the program so that we will learn more modern techniques and also not cover the things we have already learned at Johnson and Wales. The schools focus is on exquisite simplicity, and a flawless end product. We have one-on-one evaluations every week with our chef to review our strengths and weaknesses. The school will host a few guest chef demonstrations (with very fancy chefs) we will get to experience, and also there are continual professional development classes at the school, so every Wednesday we will get to observe a buffet done by chefs with more skill than us. It looks like we will learn so much!
We also were shown photos of all of the nearby places to travel to, so everyone is all abuzz trying to make their weekend plans. I think we will head to Annecy in the Alps tomorrow and maybe go to the beachside town of Cassis next weekend. 


We walked through town and down to the grocery store to buy a few essentials for dinner. My humble meal for the evening consists of a freshly baked baguette, fresh cheese, and French apples. I am snacking while I write.Almost every stone cottage in town is complete with a verdant garden, chicken coop and painted shutters. Pear and apple trees fill backyards, and flowers are everywhere. Life seems beautiful and perfect on a sunny afternoon when you can’t speak the language to understand that life is not idyllic here.  
                                  
Some girls are going to the bowling alley tonight, which is apparently the HOT spot in town. Bowling and discotheque are very hot in rural France-who knew?
